Mousaka bit-Tigieg

Ingredjenti:
Kilo brungiel
800 g sidra tat-tigieg
100 g gobon parmiggan
400 g tadam
250 g gobon mozzarella
Bajda
Mgharfa zejt taz-zebbuga
6 sinniet tewm
4 basliet
Habaq frisk
Kuccarina paprika
2 kuccarini hwawar imhallta
Kuccarina zokkor
Bzar u melh
Metodu:
Qatta’ l-brungiel fi slajsis mit-tul, xarrbu fl-ilma
bil-melh ghal ghoxrin minuta u lahalhu. Ixwieh fuq il-grilja
ta’ scanpan u hallih mal-genb. Qatta’ s-sidra
tat-tigieg fi slajsis (fillets) irqaq, ixwihom fuq il-grilja
u hallihom mal-genb.
Ghaz-zalza:
Aqli l-basal u t-tewm fiz-zejt, zid it-tadam, hwawar, zokkor
u paprika u hallihom isiru. Ithan il-gobon parmiggan, zid
il-gobon mozzarella u ithan. Zid il-bajda.
Fil-Paella poggi saff zalza fil-qiegh, saff brungiel u saff
tigieg. Ferrex il-gobon fuqhom u kompli b’dan il-mod.
Spicca bil-gobon fil-wicc.
Sajjar ghal ghoxrin minuta fuq in-nar u kompli sajjar
ghal ghoxrin minuta ohra billi tghatti bl-ghatu tal-Griglioso
fuq temperatura ta’ 150 °.
