BBQ tal-qarnit, klamari,
salamun u l-pineapple

Ingredjenti:
Qarnita kbira
Klamari kbar jew il-boroz taghhom (squid tubes)
Bicca salamun
Meraq tal-lumi jew tal-lumicell
Tewm
Pineapple friska
Zejt ta-zebbuga
Kozbor jew tursin
Soya sauce
Oyster sauce
Basal imqatta’ fi kwadri
Bzar
Bzar ahdar u ahmar
Brungiel
Metodu:
Ghall-immarinat:
Hallat il-meraq tal-lumi, it-tewm, iz-sejt taz-zebbuga,
il-basal imqatta’, qattra soya u oyster sauce u bzar
mithun frisk. Halli mal-genb sabiex timmarina l-qarnita
u l-klamari.
Ghall-qarnita:
Jekk trid tista’ tghalli l-qarnita qabel biex trattaba.
Naddaf il-qarnita, halliha shiha u poggiha f’tagen
bl-ilma kiesah, poggiha fuq in-nar sakemm taghli u halliha
tghali ghal madwar hmistax il-minuta, sakemm tkun hadet
nofs sajran u nehhi minn fuq in-nar u halliha tibred.
Qatta’ l-qarnita f’bicciet kbar u poggi fi ftit
mill-immarinat ghal madwar siegha jew saghtejn fil-fridge.
Idlek il-grillja tal-BBQ biz-zejt qabel ma tpoggi l-qarnita
u sajjar ghal madwar ghaxar jew hmistax il-minuta skond
il-gosti tieghek, filwaqt li iddawwar u tidlek bl-immarinat
ta’ spiss.
Ghall-Klamari:
Jekk thobb il-klamari rotob, ghallihom bl-istess mod kif
ghamilt bil-qarnit u hallihom jibirdu.
B’sikkina aqta’ l-genb tal-klamari jew il-boroz
taghhom minn naha wahda.
B’sikkina taqta’ hafna qatta’ strixxi
dritti (parallel) l-isfel billi timmarka l-gilda minn zewg
nahat u aqsam fi tnejn
