Ingredjenti:
50ml zejt taz-zebbuga
75g butir mhux mielah
4 bicciet flett tal-majjal ta’ madwar 165g il-wahda
65g bebbux
100ml inbid ahmar
200ml stokk tal-vitella
100ml faqqiegh salvagg
Mgharfa hwawar friski mqatta’
Bzar u melh
Ghall-aljoli:
Frakk tal-hobz frisk
Tadam imqadded imqatta’
Tewma mqatta’ rqiqa.
Tursin
Bzaru ahmar (chilli)
Grokk brandy
Butir
Metodu:
Biex tipprepara l-aljoli, poggi l-frakk tal-hobz u zid it-tadam
imqadded, it-tewm, it-tursin, il-bzaru ahmar, il-brandy,
l-butir u hawwar sew. Zid iz-zejt taz-zebbuga u hawwad kollox
sew fil-food processor sabiex tifforma paste. Imla l-bebbux
bit-tahlita, ghal kull porzjon u zomm il-bqija tat-tahlita
biex isservi bhala timballo.
Naddaf il-flett sew u qatta’ f’medallions, imbaghad
iftahhom sabiex tifforma speci ta’ but u imla bil-faqqiegh
selvagg.
Sahhan iz-zejt flimkien ma’ ftit butir u aqli l-laham
ghal ftit fuq zewg nahat kemm tissigilla. Kompli sajjar
il-laham fil-forn sakemm isir sew minghajr ma jixrief. Nehhi
kull xaham zejjed u zid hmistax il-gramm butir, aqli l-basal
sa ma jigu rotob, zid il-faqqiegh u l-inbid u halli kollox
jingibed. Zid l-istokk tal-vitella u hallih jirriduci ghal
konsistenza li tixtieq.
Hawwar ghal gosti tieghek, zid il-butir u l-hwawar friski
u zomm kollox shun.
Poggi l-aljoli fin-nofs ta’ platt shun u poggi l-flett
tal-majjal fil-wicc. Servi sitt bebbuxiet mad-dawra tat-timballo
u ferra z-zalza fuq kull porzjon
